Start with the Target Cup

Paper specifications are meaningful only when connected to the coffee result the buyer wants.

Before developing a filter, define:

  • Coffee dose

  • Final beverage volume

  • Typical grind range

  • Brewing temperature

  • Manual or machine brewing

  • Expected total brew time

  • Desired cup clarity

  • Acceptable sediment level

  • Maximum wet load

  • Filter-holder dimensions

A paper that works well with a coarse grind and a small coffee dose can drain too slowly when used with finer particles or a larger batch. Conversely, a very open paper structure may complete the brew quickly but allow more sediment into the cup.

The correct filter balances flow, retention and strength within the buyer’s actual brewing method.


Three Performance Targets Must Be Approved Together

1. Water Flow

Water must pass through the paper at a rate that supports the intended brewing time.

Flow can be influenced by:

  • Fiber formation

  • Paper density

  • Porosity

  • Thickness

  • Filter surface area

  • Coffee grind distribution

  • Roast level

  • Coffee dose

  • Pouring method

  • Filter-holder geometry

For commercial approval, buyers should define an acceptable brewing-time window rather than requesting only a particular GSM.

For example, a filter can be approved based on whether the intended coffee recipe consistently completes within the buyer’s acceptable time range under controlled testing.

2. Coffee-Fine Retention

The paper should retain undesirable coffee particles without becoming blocked too easily.

The buyer should evaluate:

  • Visible sediment after the coffee rests

  • Cup clarity

  • Fine-particle accumulation on the paper

  • Flow slowdown during the brew

  • Differences between fine and coarse grind settings

  • Loose paper fibers in the beverage

Higher retention is not automatically better if it causes excessive clogging or an impractically long brew cycle.

3. Wet Strength

Once saturated, the filter must support both the coffee grounds and retained water without tearing.

Wet-strength validation should use:

  • The maximum intended coffee dose

  • The full brewing volume

  • The longest expected brew time

  • The finished filter shape

  • The actual sealed edge

  • Normal removal and disposal actions

Testing a flat, dry paper sample does not confirm that the finished filter will survive commercial use.


Fit Must Be Defined by Geometry, Not Cup Count

Descriptions such as “two-cup,” “four-cup” or “large filter” are not precise enough for custom production. Two coffee makers with similar stated capacities can use different wall angles, heights and bottom structures.

Conical Filters

For a conical format, provide:

  • Top opening width or diameter

  • Total height

  • Sidewall angle

  • Bottom shape

  • Seam position

  • Fold line

  • Maximum coffee dose

  • Existing filter sample or holder drawing

An undersized filter can pull away from the holder wall or collapse during pouring. An oversized filter can wrinkle, obstruct water flow or create uneven contact with the holder.

Cup-Style Filters

For a cup or basket format, confirm:

  • Bottom diameter

  • Top diameter

  • Sidewall height

  • Flat or formed bottom

  • Pleat depth

  • Number of pleats

  • Basket volume

  • Batch coffee dose

Food-service buyers should also test how easily staff can separate one filter from a stack during busy operating periods.

Round Filter Sheets

Round sheets may be used in compatible coffee makers, presses or specialized filtration equipment.

The specification should include:

  • Finished diameter

  • Dimensional tolerance
